Ingredients
  

  • 2 large carrots peeled and chopped
  • 2 Granny Smith apples peeled, cored, and chopped
  • 1 large onion chopped
  • 2 cloves of garlic minced
  • 1 tablespoon extra virgin olive oil
  • 4 cups vegetable stock
  • 1 teaspoon ground cinnamon
  • Half teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 cup coconut milk

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the onions and garlic, sauté until the onion is translucent.
  • Add the chopped carrots, apples, and spices to the pot. Stir well to ensure all ingredients are coated with spices.
  • Pour in the vegetable stock and bring the pot to a gentle boil.
  • Reduce heat, cover the pot and allow it to simmer until the carrots and apples are tender.
  • Transfer the mixture into a blender, and blend until smooth.
  • Pour the soup back into the pot and stir in the coconut milk. Season with salt and pepper to your taste.

Notes
